Si tratta senza dubbio di una ricetta controversa che seguiamo fedelmente da tre generazioni. In pentola far imbiondire olio e cipolla per qualche minuto poi aggiungere la carne, la sovracoscia di maiale e sfumare con il vino. Successivamente, nell’ordine, inseriamo il concentrato di pomodoro, la passata di pomodoro e i pelati precedentemente schiacciati. Piccolo segreto: oltre al sale aggiungere anche un po’ di zucchero per smorzare l’acidità del pomodoro. Da notare che, a differenza della genovese, per la preparazione del Ragù la carne resta in cottura per tutto il tempo.
